Ingredients
1/2 cup granulated Swerve
2 1/2 c almond flour
1 tsp baking powder
3 large eggs beaten
1 c sour cream
2 tsp vanilla extract
Combine dry ingredients in bowl and mix.
In separate bowl mix eggs with mixer. Add sour cream and vanilla. Combine.
Add the dry ingredients and mix.
Place muffin holders in muffin tin, I used the silicone ones to avoid sticking. Makes 12 muffins!!
Bake at 400 for 18-20 minutes.
Topping
In bowl combine 1/2 c granulated brown Swerve,1 tsp cinammon and 2 Tbsps melted butter!
When cupcakes cool, dip in melted butter then roll top in sugar mixture.
