Instructions:
- Prepare the Spaghetti Squash:
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the cut sides with olive oil and sprinkle with salt and pepper.
- Place the squash halves cut-side down on a baking sheet lined with parchment paper.
- Bake for 30-40 minutes, or until the squash is tender and easily shreds into “noodles” with a fork.
- Once cooked, use a fork to scrape the squash into strands. Set aside.
- Cook the Chicken:
- While the squash is baking, heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
- Season the chicken cubes with salt, pepper, garlic powder, and onion powder.
- Cook the chicken in the skillet for 6-8 minutes, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- Make the Alfredo Sauce:
- In the same skillet, reduce the heat to medium-low and add the heavy cream.
- Stir in the grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Simmer the sauce for 3-5 minutes, stirring occasionally, until it thickens slightly.
- Combine Everything:
- Add the cooked chicken and spaghetti squash “noodles” to the skillet with the Alfredo sauce.
- Toss everything together until well-coated and heated through.
- Optional Topping:
- If desired, sprinkle shredded mozzarella cheese over the top and broil for 2-3 minutes until bubbly and golden.
- Serve:
- Garnish with fresh parsley or basil if desired.
