Ingredients
• 2 garlic cloves, peeled and minced
• 1 teaspoon cumin
• 1 tablespoon coconut oil
• 1 pound ground beef
• ½ cup onion, chopped
• 1 teaspoon smoked paprika
• Salt and pepper to taste
• 3 zucchini, sliced lengthwise, insides scooped out
• ¼ cup fresh cilantro, chopped
• ½ cup cheddar cheese, shredded
• 1 and ½ cups keto-friendly enchilada sauce
• Avocado, chopped
• Green onions, chopped
• Tomatoes, cored and chopped

How To
- Take a pan and place it over medium-high heat
- Add oil and heat it up
- Add onions and stir cook for 2 minutes
- Add beef and stir for a few minutes
- Add paprika, salt, pepper, cumin, garlic and stir cook for 2 minutes
- Transfer zucchini halves to baking pan
- Stuff each with beef mix, pour enchilada sauce on top
- Sprinkle cheddar
- Bake (covered) for 20 minutes at 350-degree F
- Uncover and sprinkle cilantro
- Bake for 5 minutes more
- Sprinkle avocado, green onions, tomatoes on top
- Serve and enjoy!
