Macros (per 3 fritters): ~35g protein | ~6g carbs | ~10g fat


🛒 INGREDIENTS:

  • 1 ½ cups cooked shredded chicken breast
  • ¾ cup cottage cheese (2% or full-fat for extra creaminess)
  • 2 large eggs
  • ¼ cup almond flour (or oat flour)
  • ¼ cup chopped chives or green onions
  • 1 tsp garlic powder
  • Salt & black pepper to taste
  • Olive oil or avocado oil spray (for frying)
  • Optional: a squeeze of lemon + extra chives for garnish

🍳 INSTRUCTIONS:

  1. Mix It Up
    In a large bowl, combine chicken, cottage cheese, eggs, almond flour, herbs, and spices. Stir until a chunky, moist mixture forms.
  2. Shape the Fritters
    Scoop mixture into palm-sized patties. Flatten gently — not too thin!
  3. Cook ‘Em Crispy
    Heat a nonstick pan over medium heat with a little oil spray. Cook each fritter 3–4 minutes per side until golden brown and crispy.
  4. Serve + Slay
    Serve warm with lemon wedges, Greek yogurt dip, or over a salad. Store leftovers in the fridge (or freeze) for easy protein wins all week.
