Ingredients:

For the Chicken:

Instructions:

For the Chicken:

  1. Preheat the oven to 425 degrees F.
  2. Spray a large cookie sheet with cooking spray or line it with aluminum foil.
  3. In a shallow bowl, combine the beaten egg and mayonnaise, mixing until fully combined. Set aside.
  4. In another shallow bowl, combine the Keto Breading ingredients. Dip each sliced chicken tender into the egg mixture, then dredge it in the breading, ensuring it’s well-coated.
  5. Place each coated tender on the prepared baking sheet and brush it with the melted butter.
  6. Bake for 15 minutes, carefully turn the tenders using tongs, and bake for an additional 5-10 minutes or until the chicken is cooked through.

For the Waffles:

  1. In a small bowl, combine the eggs, shredded cheese, almond flour, and baking powder, mixing thoroughly.
  2. Preheat a waffle maker according to the manufacturer’s instructions and lightly grease it with cooking oil if needed.
  3. Spoon the batter into the waffle maker and cook for 2-3 minutes or until steam is no longer coming from the machine.

Notes:

  • For an air fryer version, preheat the air fryer to 390 degrees F, place the chicken tenders (without the melted butter), and lightly spray with cooking oil. Cook for 5 minutes, flip, and cook for an additional 2-3 minutes or until the chicken is cooked through.
