Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (15 ounces) diced tomatoes, drained
  • 1 jar (16 ounces) salsa
  • 1 package (8 ounces) lasagna noodles, cooked according to package instructions
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Add the onion and garlic, and cook until softened.
  3. Stir in the taco seasoning mix, black beans, corn, and diced tomatoes. Simmer for 5-10 minutes, then remove from heat.
  4. In a 9×13 inch baking dish, spread a thin layer of salsa on the bottom.
  5. Place a layer of cooked lasagna noodles over the salsa.
  6. Spread a layer of the beef mixture over the noodles, followed by a layer of cheese.
  7. Repeat the layers, ending with a layer of cheese on top.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly browned.
  10. Let the lasagna cool for a few minutes before serving. Serve with optional toppings as desired.
