Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn kernels, drained
- 1 can (15 ounces) diced tomatoes, drained
- 1 jar (16 ounces) salsa
- 1 package (8 ounces) lasagna noodles, cooked according to package instructions
- 2 cups shredded Mexican cheese blend
- Optional toppings: sour cream, chopped cilantro, sliced jalapeños
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium-high heat until browned. Add the onion and garlic, and cook until softened.
- Stir in the taco seasoning mix, black beans, corn, and diced tomatoes. Simmer for 5-10 minutes, then remove from heat.
- In a 9×13 inch baking dish, spread a thin layer of salsa on the bottom.
- Place a layer of cooked lasagna noodles over the salsa.
- Spread a layer of the beef mixture over the noodles, followed by a layer of cheese.
- Repeat the layers, ending with a layer of cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly browned.
- Let the lasagna cool for a few minutes before serving. Serve with optional toppings as desired.
