Keto Tiramisu Chaffle 🤤

Ingredients

Chaffles
2 eggs
2 oz softened cream cheese
1 tbsp coconut flour
1 tbsp heavy whipping cream
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp powdered swerve

Coffee Syrup

4 tbsp strong coffee (room temp)
5 drops liquid stevia

Filling

3 oz mascarpone cheese
1 oz cream cheese
1/4 cup heavy whipping cream
2 tsp vanilla extract
1/4 tsp powdered swerve

To Dust

1/2 tsp unsweetened cocoa powder

Chaffles (Makes 4)

  1. Preheat waffle maker.
  2. Combine all ingredients well.
  3. Pour 1/4 of better into waffle maker.
  4. Close lid and cook 3-4 min.
    1. Repeat with remaining batter.

Syrup

  1. In a small bowl, mix coffee and stevia well.

Filling

  1. Beat heavy whipping cream, vanilla and swerve until stiff peaks form. Set aside.
  2. In a separate bowl, cream the mascarpone and cream cheese. Fold in whipped cream.

Assembly

  1. Spoon a tbsp of coffee on a chaffle. Spread 1/4 of the filling on top. Top with a second chaffle. Repeat until you have 4 layers.
  2. Generously dust with cocoa powder.
    1. Refrigerate overnight or longer.
