Ingredients:

  • 1 cup peanut butter (See post for substitutions)
  • 2/3 cup granulated sweetener of choice
  • 1 large egg

Instructions:

  1. Preheat the oven to 180°C/350°F. Line a large baking tray with parchment paper or prepare a Silpat cookie sheet.
  2. In a large mixing bowl, combine all your ingredients and mix very well.
  3. Form 12 balls of cookie dough and place them on the lined pan. Press each cookie into a circular shape and press down with two forks. Bake the cookies for 10-12 minutes, or until they turn golden on the edges.
  4. Remove from the oven and let them cool completely. If desired, drizzle with chocolate and add peanuts.

Notes:

To store: Keep the peanut butter cookies in a sealed container at room temperature. They will remain fresh for up to 2 weeks. Alternatively, you can refrigerate them, and they will keep for up to 1 month.

To freeze: Place the cookies in parchment paper and store them in a ziplock bag or shallow container. Frozen cookies will stay fresh for up to 6 months.
