  • 2 tablespoons cream cheese
  • 1 large egg

  • 1/2 cup sugar-free tomato sauce or marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 4-6 slices of cooked bacon, crumbled
  • 4 large eggs

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a microwave-safe bowl, melt the 2 cups of mozzarella cheese and cream cheese together. You can do this in 20-second increments, stirring in between, until fully melted.
  3. Add the almond flour and egg to the melted cheese mixture. Mix well until a dough forms. If desired, you can also add Italian seasoning for extra flavor.
  4. Place the dough on a parchment paper-lined baking sheet. Use your hands to flatten and shape the dough into a round pizza crust, about 1/4 inch thick.
  5. Bake the crust in the preheated oven for about 10-12 minutes, or until it’s firm and slightly golden around the edges.
  6. Once the crust is done, remove it from the oven and spread the sugar-free tomato sauce evenly over the crust.
  7. Sprinkle 1/2 cup of shredded mozzarella cheese over the sauce.
  8. Scatter the diced bell peppers, onions, and crumbled bacon over the cheese.
  9. Carefully crack 4 eggs onto the pizza, spacing them out evenly.
  10. Return the pizza to the oven and bake for another 10-15 minutes, or until the egg whites are set but the yolks are still slightly runny (you can adjust the baking time based on your egg preference).
  11. Once the eggs are cooked to your liking, remove the pizza from the oven.
  12. Allow the pizza to cool slightly before slicing and serving.
