This refreshing and light dish features succulent shrimp cooked in a tangy lemon garlic butter sauce, served over zucchini noodles for a healthy and low carb meal. It’s a perfect option for a quick and delicious keto dinner that’s packed with flavor!

Ingredients:

  • 1 pound of raw shrimp, peeled and deveined
  • 4 tablespoons of butter
  • 4 cloves of minced garlic
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 medium zucchinis, spiralized or cut into noodles
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  3. Add the raw shrimp to the skillet and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the lemon zest and lemon juice, and stir to deglaze the pan.
  5. Add the zucchini noodles to the skillet and cook for 2-3 minutes until slightly softened.
  6. Season the zucchini noodles with salt and pepper to taste.
  7. Add the cooked shrimp back to the skillet with the zucchini noodles, and toss to coat everything in the lemon garlic butter sauce.
  8. Cook for another 1-2 minutes until heated through.
  9. Remove from heat and garnish with chopped fresh parsley, if desired.
